Ingredients 

Main Ingredients

  • 2 cups Rice
  • 1 tablespoon Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry powder
  • 2 cups Vegetable broth
  • 1 cup Mixed vegetables carrots, peas, corn
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Rinse the rice under cold water until the water runs clear.
  2. 2. In a pot, bring the vegetable broth to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  3. 3. In a pan, heat the oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  4. 4. Add the curry powder to the pan and cook for another minute, stirring constantly.
  5. 5. Add the mixed vegetables to the pan and cook until they are tender.
  6. 6. Combine the cooked rice with the vegetable mixture, season with salt and pepper to taste, and stir well.
  7. 7. Serve hot and enjoy!
