Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon curry powder
  • 1 can coconut milk 13.5 oz
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice freshly squeezed
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon cilantro, chopped for garnish

Instructions 

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and ginger, and cook for another 2 minutes until fragrant.
  3. Stir in the curry powder and cook for 1 minute to release its flavors.
  4. Pour in the coconut milk and fish sauce, and bring to a simmer.
  5. Add the shrimp and cook until they turn pink and are cooked through, about 5 minutes.
  6. Stir in the lime juice and cherry tomatoes, and cook for another 2 minutes.
  7. Garnish with chopped cilantro and serve hot.
