Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon curry powder
  • 1 cup frozen peas
  • 1 cup diced tomatoes canned
  • to taste salt and pepper

Instructions 

  1. 1. Heat olive oil in a saucepan over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. 3. Stir in curry powder and cook for another minute.
  4. 4. Add rinsed quinoa and vegetable broth. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. 6. Stir in frozen peas and diced tomatoes. Cook for another 5 minutes.
  7. 7. Season with salt and pepper to taste. Serve warm.
