  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • 1 cup grated cucumber peeled and seeded
  • ½ cup chopped nuts walnuts or pecans
  • ½ cup vegetable oil
  • 2 eggs beaten
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine flour, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar, grated cucumber, nuts, oil, eggs, and vanilla.
  4. Combine wet and dry ingredients. Stir until just combined.
  5. Pour batter into the prepared loaf pan.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
