Ingredients 

Choux Pastry

  • 1 cup water
  • ½ cup butter unsalted
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 4 eggs large

Vanilla Cream Filling

  • 2 cups heavy cream
  • ¼ cup sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, bring water, butter, and salt to a boil.
  3. Add flour all at once, stirring vigorously until the mixture forms a ball.
  4. Remove from heat and let cool slightly. Beat in eggs one at a time until smooth.
  5. Drop by tablespoonfuls onto a baking sheet. Bake for 20-25 minutes until golden brown.
  6. For the filling, whip heavy cream, sugar, and vanilla extract until stiff peaks form.
  7. Once puffs are cool, cut in half and fill with whipped cream mixture.
