  • 2 cups all-purpose flour
  • ½ cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, cold and cut into small pieces
  • 1 cup fresh cranberries, roughly chopped
  • 1 tablespoon orange zest
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the cranberries and orange zest.
  5. In a separate bowl, whisk together the heavy cream and vanilla extract. Gradually add this to the dry ingredients, mixing until just combined.
  6. Turn the dough out onto a floured surface and knead gently. Pat into a circle about 1 inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
