Ingredients 

Main Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup olive oil
  • 2 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes.
  2. 2. Fluff the couscous with a fork and transfer to a mixing bowl. Let it cool.
  3. 3. Add the cucumber, red bell pepper, red onion, and parsley to the couscous. Mix well.
  4. 4. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the couscous mixture and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
