Ingredients

  • 4 Cornish game hens
  • 8 cloves Garlic minced
  • 4 sprigs Rosemary
  • ¼ cup Olive oil
  • to taste Salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the hens and pat them dry with paper towels.
  3. Rub the hens with olive oil, then season inside and out with salt and pepper.
  4. Place a sprig of rosemary and a clove of garlic inside each hen.
  5. Arrange the hens in a baking dish and roast in the preheated oven for about 1 hour, or until the hens are golden brown and the juices run clear.
  6. Baste the hens with the drippings every 20 minutes.
  7. Let the hens rest for 10 minutes before serving.
