Ingredients

  • 3 pounds corned beef brisket
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup potatoes, chopped

Instructions 

  1. Preheat your oven to 300°F (150°C).
  2. Place the corned beef brisket in a Dutch oven.
  3. Add the chopped onion, minced garlic, and beef broth.
  4. Sprinkle mustard seeds, black peppercorns, thyme, and paprika over the beef.
  5. Cover and cook in the preheated oven for 3 hours.
  6. Add the chopped carrots, celery, and potatoes to the pot.
  7. Cover and cook for an additional 1 hour, or until the vegetables are tender.
  8. Remove from the oven and let rest for 10 minutes before slicing.
