- 3 pounds corned beef brisket
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon mustard seeds
- 1 tablespoon black peppercorns
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 cup potatoes, chopped
Preheat your oven to 300°F (150°C).
Place the corned beef brisket in a Dutch oven.
Add the chopped onion, minced garlic, and beef broth.
Sprinkle mustard seeds, black peppercorns, thyme, and paprika over the beef.
Cover and cook in the preheated oven for 3 hours.
Add the chopped carrots, celery, and potatoes to the pot.
Cover and cook for an additional 1 hour, or until the vegetables are tender.
Remove from the oven and let rest for 10 minutes before slicing.
