Instructions
In a mixing bowl, combine corn, zucchini, flour, egg, green onions, Parmesan cheese, salt, and black pepper.
Heat olive oil in a frying pan over medium heat.
Scoop 2 tablespoons of the mixture into the pan and flatten slightly. Cook until golden brown, about 3-4 minutes per side.
Remove from pan and drain on paper towels. Serve warm.
