Main Ingredients
- 4 cups corn kernels fresh or frozen
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 0.25 cup red onion finely chopped
- 2 tablespoons olive oil
- 2 tablespoons lime juice freshly squeezed
- 0.25 cup cilantro chopped
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
In a large mixing bowl, combine corn, cherry tomatoes, cucumber, and red onion.
In a small bowl, whisk together olive oil and lime juice. Pour over the salad.
Add chopped cilantro, salt, and black pepper. Toss everything together until well combined.
Serve immediately or refrigerate for later.
