- 1 cup cornmeal
- 1 cup all-purpose flour
- ¼ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 cup milk
- 2 large eggs
- ¼ cup vegetable oil
In a bowl, mix cornmeal, flour, sugar, baking powder, and salt.
In another bowl, whisk milk, eggs, and oil.
Combine wet and dry ingredients, stir until smooth.
Heat a griddle or skillet over medium heat, grease lightly.
Pour batter onto griddle, cook until bubbles form, flip and cook until golden brown.
