Ingredients 

Crust

  • 2 cups cookie crumbs use graham crackers or any cookie of choice
  • ½ cup melted butter

Filling

  • 24 oz cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 eggs

Instructions 

  1. Preheat oven to 325°F (160°C).
  2. Mix cookie crumbs and melted butter in a bowl. Press into the bottom of a springform pan.
  3. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, beating well after each addition.
  4. Pour filling over crust. Bake for 60 minutes or until the center is set.
  5. Let cool, then refrigerate for at least 4 hours before serving.
