Coffee Cheesecake
A rich and creamy cheesecake with a hint of coffee flavor.

Crust
- 1.5 cups Graham cracker crumbs
- 0.5 cup Melted butter
Filling
- 24 oz Cream cheese softened
- 1 cup Sugar
- 3 units Eggs
- 1 teaspoon Vanilla extract
- 2 tablespoon Instant coffee granules dissolved in 1 tablespoon hot water
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla and dissolved coffee granules.
Pour filling over crust. Bake for 60 minutes or until center is set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
