Tart Crust
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter cold and cubed
- ¼ cup granulated sugar
- 1 pinch salt
- 2-3 tablespoon cold water
Coconut Filling
- 1 cup sweetened shredded coconut
- ½ cup sweetened condensed milk
- 1 large egg beaten
- 1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, and salt. Add cold butter and mix until the mixture resembles coarse crumbs.
Add cold water, one tablespoon at a time, until the dough comes together. Press the dough into a tart pan.
In another bowl, mix shredded coconut, sweetened condensed milk, beaten egg, and vanilla extract.
Pour the coconut mixture into the tart crust. Bake for 25 minutes or until golden brown.
Let the tarts cool before serving.
