Ingredients

  • ½ cup small pearl tapioca
  • 2 cups coconut milk
  • cup sugar
  • 1 pinch salt
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Soak the tapioca in water for about 30 minutes, then drain.
  2. 2. In a saucepan, combine the coconut milk, sugar, and salt. Bring to a simmer over medium heat.
  3. 3. Add the tapioca to the saucepan and cook, stirring frequently, until the tapioca is translucent and the mixture has thickened, about 15 minutes.
  4. 4. Remove from heat and stir in the vanilla extract.
  5. 5. Let the pudding cool slightly, then transfer to serving bowls. Chill in the refrigerator before serving.
