Ingredients

  • 1 cup Coconut milk
  • ½ cup Sugar
  • ¼ cup Cornstarch
  • 1 cup Water
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a saucepan, combine coconut milk, sugar, and water. Heat over medium heat until the sugar is dissolved.
  2. In a small bowl, mix cornstarch with a little water to make a slurry. Add this to the saucepan.
  3. Cook, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and stir in vanilla extract.
  4. Pour the pudding into serving bowls and let it cool to room temperature. Refrigerate for at least 2 hours before serving.
