Ingredients 

Main Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 1 can coconut milk 14 oz
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract

Optional Toppings

  • mango slices optional
  • toasted coconut flakes optional

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice and water. Bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
  4. Stir in the coconut milk, sugar, and salt. Cook over medium heat, stirring frequently, until thick and creamy, about 15 minutes.
  5. Remove from heat and stir in the vanilla extract.
  6. Serve warm or chilled, topped with mango slices or toasted coconut flakes if desired.
