Ingredients

  • 3 cups shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix shredded coconut, sweetened condensed milk, and vanilla extract.
  3. In another bowl, beat egg whites and salt until stiff peaks form.
  4. Gently fold egg whites into the coconut mixture.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Bake for 15-20 minutes, or until golden brown.
  7. Let cool completely.
  8. Melt chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
  9. Dip the bottom of each macaroon into the melted chocolate and place on parchment paper to set.
