Ingredients

  • 3 cups sweetened shredded coconut
  • cup sweetened condensed milk
  • 1 ½ teaspoon vanilla extract
  • 2 large egg whites at room temperature
  • ¼ teaspoon salt

Instructions 

  1. Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
  3. In a separate bowl, beat the egg whites and salt until stiff peaks form. Gently fold the egg whites into the coconut mixture.
  4. Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.
  5. Bake for 20-25 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
