Coconut Haupia and Chocolate Pie

Ingredients 

Main Ingredients

  • 1 cup Coconut Milk
  • 1 cup Whole Milk
  • ½ cup Sugar
  • ½ cup Cornstarch
  • 1 teaspoon Vanilla Extract
  • 1 cup Chocolate Chips
  • 1 unit Pre-baked Pie Crust

Instructions 

  1. In a saucepan, combine coconut milk, whole milk, and sugar. Cook over medium heat until the sugar is dissolved.
  2. In a small bowl, mix cornstarch with a little water to make a slurry. Add to the saucepan and cook until thickened, stirring constantly.
  3. Remove from heat and stir in vanilla extract.
  4. Pour half of the mixture into the pre-baked pie crust.
  5. Add chocolate chips to the remaining mixture in the saucepan and stir until melted and smooth.
  6. Pour the chocolate mixture over the coconut layer in the pie crust.
  7. Refrigerate for at least 2 hours before serving.
