Ingredients

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoon curry powder
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 cup frozen peas
  • 1 tablespoon lime juice freshly squeezed
  • 1 handful cilantro chopped, for garnish

Instructions 

  1. Heat the oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
  2. Add the garlic and ginger, and cook for another minute until fragrant.
  3. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  4. Stir in the curry powder and cook for another minute.
  5. Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a simmer and cook for 15 minutes, or until the chicken is cooked through.
  6. Add the frozen peas and cook for another 2-3 minutes.
  7. Stir in the lime juice and garnish with chopped cilantro before serving.
