  • 4 pieces Chicken Breasts boneless, skinless
  • 1 cup Coconut Milk
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 cloves Garlic minced

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Season the chicken breasts with salt and pepper.
  3. 3. Cook the chicken breasts in the skillet until golden brown, about 5-7 minutes per side.
  4. 4. Remove the chicken from the skillet and set aside.
  5. 5. In the same skillet, add the minced garlic and cook for 1 minute.
  6. 6. Pour in the coconut milk and bring to a simmer.
  7. 7. Return the chicken to the skillet and cook for another 10-15 minutes, until the chicken is cooked through.
  8. 8. Serve hot with your choice of sides.
