  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 1 cup Coconut milk
  • 0.5 cup Unsalted butter, melted
  • 2 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 2 Eggs
  • 1 cup Shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a mixing bowl, combine flour and baking powder.
  3. In another bowl, beat the sugar and melted butter until creamy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, alternating with coconut milk. Mix until just combined. Fold in shredded coconut.
  5. Pour the batter into the prepared baking pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
