Main Ingredients
- 3 cups shredded coconut
- 1 can sweetened condensed milk
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 2 tablespoon shortening
In a large bowl, mix together the shredded coconut, sweetened condensed milk, powdered sugar, and vanilla extract until well combined.
Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
Freeze the balls for about 30 minutes.
In a microwave-safe bowl, melt the chocolate chips and shortening together in 30-second intervals, stirring in between, until smooth.
Dip each coconut ball into the melted chocolate, then place back on the parchment paper.
Let the chocolate set before serving.
