Ingredients 

Main Ingredients

  • 3 cups shredded coconut
  • 1 can sweetened condensed milk
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoon shortening

Instructions 

  1. In a large bowl, mix together the shredded coconut, sweetened condensed milk, powdered sugar, and vanilla extract until well combined.
  2. Shape the mixture into small balls and place them on a baking sheet lined with parchment paper.
  3. Freeze the balls for about 30 minutes.
  4. In a microwave-safe bowl, melt the chocolate chips and shortening together in 30-second intervals, stirring in between, until smooth.
  5. Dip each coconut ball into the melted chocolate, then place back on the parchment paper.
  6. Let the chocolate set before serving.
