Ingredients

  • ½ cup small pearl tapioca not instant
  • 3 cups milk
  • cup sugar
  • ¼ teaspoon salt
  • 2 eggs beaten
  • 1 teaspoon vanilla extract

Instructions 

  1. 1. Soak the tapioca in water for 30 minutes, then drain.
  2. 2. In a saucepan, combine the milk, sugar, and salt. Bring to a boil over medium heat, stirring constantly.
  3. 3. Add the tapioca and reduce the heat to low. Cook, stirring frequently, for about 15 minutes until the tapioca is translucent.
  4. 4. In a small bowl, beat the eggs. Gradually add a small amount of the hot tapioca mixture to the eggs, stirring constantly to temper the eggs.
  5. 5. Return the egg mixture to the saucepan and cook for another 2 minutes, stirring constantly.
  6. 6. Remove from heat and stir in the vanilla extract. Let cool before serving.
