Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.25 cups Sugar
  • 0.5 cups Melted butter

Filling

  • 4 packages Cream cheese (8 oz each) softened
  • 1 cup Sugar
  • 1 teaspoon Vanilla extract
  • 4 Eggs room temperature

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing on low speed until just blended. Pour over crust.
  4. Bake for 55-60 minutes or until the center is almost set. Run a knife around the rim of the pan to loosen the cake; cool before removing the rim. Refrigerate for 4 hours or overnight.
