Main Ingredients
- 4 eggs separated
- 100 g granulated sugar
- 65 g all-purpose flour sifted
- 40 g cocoa powder sifted
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Filling and Frosting
- 200 ml heavy cream chilled
- 100 g dark chocolate melted
- 50 g powdered sugar
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
In a mixing bowl, beat egg yolks and granulated sugar until pale and fluffy. Add vanilla extract.
In another bowl, whisk egg whites with a pinch of salt until stiff peaks form.
Gently fold the egg whites into the yolk mixture. Sift in flour and cocoa powder, and fold until combined.
Spread the batter evenly on the prepared baking tray. Bake for 10-15 minutes.
Once baked, turn the cake onto a clean kitchen towel dusted with powdered sugar. Roll the cake with the towel and let it cool.
For the filling, whip the heavy cream until stiff peaks form. Unroll the cake, spread the whipped cream, and roll it back.
For the frosting, mix melted dark chocolate with powdered sugar. Spread over the rolled cake.
