Ingredients 

Crust

  • 1 ½ cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Melted butter

Filling

  • 1 cup Heavy cream
  • 8 oz Dark chocolate chopped
  • 3 Egg yolks
  • ¼ cup Sugar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into tart pan.
  3. Bake crust for 10 minutes. Let cool.
  4. Heat heavy cream until just boiling. Pour over chopped chocolate. Let sit for 5 minutes, then whisk until smooth.
  5. In a separate bowl, whisk egg yolks and sugar until pale. Add vanilla extract.
  6. Fold chocolate mixture into egg mixture. Pour into cooled crust.
  7. Chill in the fridge for at least 2 hours before serving.
