Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • 0.5 cups Melted butter

Filling

  • 1 cup Heavy cream
  • 8 oz Semisweet chocolate chopped
  • 3 Egg yolks
  • 0.25 cup Sugar
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs and melted butter in a bowl. Press into a pie dish to form the crust.
  3. Bake crust for 10 minutes. Let cool.
  4. In a saucepan, heat heavy cream until it just begins to simmer. Remove from heat and add chopped chocolate. Stir until smooth.
  5. In a separate bowl, whisk egg yolks and sugar until pale. Slowly add chocolate mixture, whisking constantly. Add vanilla extract.
  6. Pour filling into cooled crust. Refrigerate for at least 2 hours before serving.
