Ingredients 

Cookies

  • 1 cup All-purpose flour
  • ½ cup Cocoa powder
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • ½ cup Unsalted butter softened
  • ½ cup Granulated sugar
  • ½ cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1 Large egg

Ice Cream

  • 2 cups Vanilla ice cream softened

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat butter and sugars until creamy. Add vanilla and egg, and mix well.
  4. Gradually add dry ingredients to the wet mixture. Mix until combined.
  5. Drop dough by tablespoonfuls onto the prepared baking sheet. Flatten slightly with a spatula.
  6. Bake for 8-10 minutes. Let cookies cool completely.
  7. Scoop softened ice cream onto one cookie and top with another. Press gently to spread ice cream.
  8. Wrap sandwiches in plastic wrap and freeze for at least 2 hours before serving.
