Chocolate Dipped Coconut Macaroons

Macaroons
- 3 cups sweetened shredded coconut
- ⅔ cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper.
In a mixing bowl, combine the shredded coconut, sweetened condensed milk, and vanilla extract. Mix well.
Using a spoon, drop small mounds of the mixture onto the prepared baking sheet.
Bake for 20-25 minutes, or until the edges are golden brown. Let them cool completely.
Melt the chocolate chips in a microwave-safe bowl, stirring every 30 seconds until smooth.
Dip the bottom of each macaroon into the melted chocolate and place them back on the parchment paper to set.
