- 1 cup dark chocolate chips
- ½ cup coconut cream
- 1 cup shredded coconut
- 1 teaspoon vanilla extract
Melt the dark chocolate chips in a microwave-safe bowl or over a double boiler.
Stir in the coconut cream and vanilla extract until well combined.
Chill the mixture in the refrigerator for about 1 hour, or until firm.
Once firm, scoop out small amounts of the mixture and roll into balls.
Roll each ball in shredded coconut to coat.
Place the truffles on a baking sheet lined with parchment paper and chill until ready to serve.
