Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 can Black Beans, drained and rinsed
  • 2 tablespoon Chipotle Peppers in Adobo Sauce, chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 8 small Corn Tortillas
  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 1 cup Shredded Cheese
  • 1 cup Sour Cream
  • 1 cup Chopped Cilantro

Instructions 

  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in black beans, chipotle peppers, ground cumin, and ground coriander. Cook for 5-7 minutes, stirring occasionally.
  4. Warm corn tortillas in a separate skillet or microwave.
  5. Assemble tacos by placing a spoonful of the black bean mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, sour cream, and chopped cilantro.
