Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 can diced tomatoes
  • 2 cans chickpeas, drained and rinsed
  • 2 cups vegetable broth
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 lemon, juiced
  • ¼ cup fresh parsley, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, ground cumin, ground coriander, and paprika. Cook for another 2 minutes.
  4. Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
  5. Reduce heat and let it simmer for 20 minutes.
  6. Season with salt and black pepper to taste.
  7. Stir in the lemon juice and chopped parsley before serving.
