Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 can diced tomatoes
- 2 cans chickpeas, drained and rinsed
- 2 cups vegetable broth
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 1 lemon, juiced
- ¼ cup fresh parsley, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until softened, about 5 minutes.
Stir in the minced garlic, ground cumin, ground coriander, and paprika. Cook for another 2 minutes.
Add the diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
Reduce heat and let it simmer for 20 minutes.
Season with salt and black pepper to taste.
Stir in the lemon juice and chopped parsley before serving.
