Chickpea Spinach Stew
A hearty and healthy stew made with chickpeas, spinach, and a blend of spices.

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 0.5 teaspoon turmeric
- 0.25 teaspoon cayenne pepper
- 2 cans chickpeas, drained and rinsed
- 1 can diced tomatoes
- 4 cups fresh spinach
- 2 cups vegetable broth
- Salt and pepper to taste
Heat olive oil in a large pot over medium heat.
Add onion and cook until soft.
Stir in garlic, cumin, paprika, turmeric, and cayenne pepper.
Add chickpeas, tomatoes, and vegetable broth.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in spinach and cook until wilted.
Season with salt and pepper to taste.
