Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Turmeric powder
  • 1 can Chickpeas, drained and rinsed
  • 1 can Diced tomatoes
  • 2 cups Fresh spinach
  • 1 cup Coconut milk
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and ginger, cook for another minute.
  4. Stir in ground cumin, coriander, and turmeric. Cook for another minute.
  5. Add chickpeas and diced tomatoes. Simmer for 10 minutes.
  6. Add fresh spinach and coconut milk. Cook until spinach is wilted.
  7. Season with salt and black pepper to taste. Serve hot.
