Chickpea Salad Wrap Recipe
A quick and easy chickpea salad wrap that's perfect for lunch or a light dinner.

Main Ingredients
- 1 can Chickpeas drained and rinsed
- 1 cup Cucumber diced
- 1 cup Cherry Tomatoes halved
- ¼ cup Red Onion finely chopped
- 2 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
- 4 pieces Tortillas whole wheat or regular
1. In a mixing bowl, mash the chickpeas with a fork until slightly chunky.
2. Add the cucumber, cherry tomatoes, red onion, olive oil, lemon juice, salt, and black pepper. Mix well.
3. Lay out the tortillas and evenly distribute the chickpea salad mixture onto each tortilla.
4. Roll up the tortillas tightly and cut in half if desired. Serve immediately.
