Chickpea Salad Recipe
A simple and delicious chickpea salad recipe.

Main Ingredients
- 2 cups Chickpeas cooked and drained
- 1 cup Cucumber diced
- 1 cup Cherry Tomatoes halved
- ¼ cup Red Onion finely chopped
- ¼ cup Parsley chopped
- 2 tablespoons Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper to taste
In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately or refrigerate for later.
