Chickpea Curry Recipe

Main Ingredients
- 2 tablespoon Olive Oil
- 1 large Onion, chopped
- 3 cloves Garlic, minced
- 1 tablespoon Ginger, minced
- 2 teaspoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 can Chickpeas, drained and rinsed 15 oz can
- 1 can Diced Tomatoes 14.5 oz can
- 1 cup Coconut Milk
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 handful Fresh Cilantro, chopped for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and sauté until translucent.
Add minced garlic and ginger, cook for another minute.
Stir in curry powder, ground cumin, and ground coriander. Cook for 2 minutes.
Add chickpeas, diced tomatoes, and coconut milk. Stir well.
Season with salt and black pepper to taste.
Simmer for 20 minutes, stirring occasionally.
Garnish with fresh cilantro before serving.
