Main Ingredients
- 4 pieces Chicken breasts boneless, skinless
- ½ cup Flour for dredging
- ¼ cup Olive oil
- ¼ cup Butter
- ½ cup Lemon juice freshly squeezed
- ½ cup Chicken broth
- ¼ cup Capers drained
- to taste Salt and pepper
Season chicken with salt and pepper, then dredge in flour.
Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Cook chicken until golden brown, about 3 minutes per side. Remove and set aside.
In the same skillet, add lemon juice, chicken broth, and capers. Bring to a boil, scraping up brown bits from the pan for extra flavor.
Return chicken to the skillet and simmer for 5 minutes. Remove chicken to a platter.
Add remaining butter to the skillet and whisk until sauce thickens. Pour sauce over chicken and serve.
