Ingredients

Main Ingredients

  • 4 pieces Chicken breasts boneless, skinless
  • ½ cup Flour for dredging
  • ¼ cup Olive oil
  • ¼ cup Butter
  • ½ cup Lemon juice freshly squeezed
  • ½ cup Chicken broth
  • ¼ cup Capers drained
  • to taste Salt and pepper

Instructions

  1. Season chicken with salt and pepper, then dredge in flour.
  2. Heat olive oil and 2 tablespoons of butter in a skillet over medium-high heat. Cook chicken until golden brown, about 3 minutes per side. Remove and set aside.
  3. In the same skillet, add lemon juice, chicken broth, and capers. Bring to a boil, scraping up brown bits from the pan for extra flavor.
  4. Return chicken to the skillet and simmer for 5 minutes. Remove chicken to a platter.
  5. Add remaining butter to the skillet and whisk until sauce thickens. Pour sauce over chicken and serve.
