Chicken Massaman Curry Recipe
A rich and flavorful Thai curry with tender chicken, potatoes, and peanuts.

Main Ingredients
- 1 lb Chicken Thighs cut into chunks
- 2 cups Coconut Milk
- 2 Potatoes peeled and cubed
- 1 Onion sliced
- 3 tablespoon Massaman Curry Paste
- 1 cup Chicken Broth
- 1 tablespoon Fish Sauce
- 1 tablespoon Brown Sugar
- ½ cup Peanuts roasted
1. Heat a large pot over medium heat and add the curry paste. Cook for 1-2 minutes until fragrant.
2. Add the chicken and cook until browned on all sides.
3. Pour in the coconut milk and chicken broth, then add the potatoes and onion. Bring to a boil.
4. Reduce heat and simmer for 20-25 minutes, until the potatoes are tender.
5. Stir in the fish sauce, brown sugar, and peanuts. Simmer for another 5 minutes.
6. Serve hot with steamed rice.
