Ingredients 

Chicken and Mango Salsa

  • 4 pieces Chicken breasts boneless, skinless
  • 2 cups Mango diced
  • 1 cup Red bell pepper diced
  • 0.5 cup Red onion diced
  • 1 piece Jalapeño seeded and minced
  • 0.25 cup Cilantro chopped
  • 2 tablespoons Lime juice freshly squeezed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper freshly ground

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and black pepper.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, combine the mango, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt in a mixing bowl. Mix well.
  5. 5. Once the chicken is done, let it rest for a few minutes, then slice it.
  6. 6. Serve the grilled chicken topped with the mango salsa.
