Ingredients 

Chimichangas

  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 cup shredded cheese
  • 4 large flour tortillas
  • 2 tablespoon butter, melted

Sour Cream Sauce

  • 1 cup sour cream
  • 1 cup salsa verde
  • 1 tablespoon lime juice

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine shredded chicken, salsa, ground cumin, dried oregano, and shredded cheese.
  3. Place about ½ cup of the chicken mixture in the center of each tortilla. Fold in the sides and roll up to secure the filling.
  4. Brush the chimichangas with melted butter and place them seam-side down on a baking sheet.
  5. Bake for 20-25 minutes or until golden and crispy.
  6. While the chimichangas are baking, prepare the sour cream sauce by mixing sour cream, salsa verde, and lime juice in a bowl.
  7. Serve the chimichangas hot, topped with the sour cream sauce.
