Chicken Cacciatore
A classic Italian dish with chicken, tomatoes, and bell peppers.

Main Ingredients
- 4 pieces Chicken thighs bone-in, skin-on
- 1 large Onion sliced
- 2 cloves Garlic minced
- 1 large Bell pepper sliced
- 1 cup Mushrooms sliced
- 1 can Diced tomatoes 14.5 oz
- 0.5 cup Chicken broth
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- to taste Salt and pepper
1. Heat a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides. Remove and set aside.
2. In the same skillet, add the onion, garlic, bell pepper, and mushrooms. Cook until the vegetables are softened.
3. Add the diced tomatoes, chicken broth, oregano, and basil. Stir to combine.
4. Return the chicken to the skillet. Spoon some of the sauce over the chicken. Reduce heat to low, cover, and simmer for 30 minutes or until the chicken is cooked through.
5. Season with salt and pepper to taste. Serve hot.
