Ingredients 

Main Ingredients

  • 1 cup wild rice
  • 1 lb chicken breast boneless, skinless
  • 1 onion diced
  • 2 carrots carrots sliced
  • 2 stalks celery sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. 1. In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and sliced celery. Cook until vegetables are tender, about 5-7 minutes.
  2. 2. Add chicken breast to the pot and pour in chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until chicken is cooked through.
  3. 3. Remove chicken from the pot and shred it using two forks. Return shredded chicken to the pot.
  4. 4. Add wild rice to the pot and simmer for another 20-25 minutes or until rice is tender.
  5. 5. Stir in heavy cream, salt, and black pepper. Cook for an additional 5 minutes. Serve hot.
