  • 1 lb chicken breast, diced
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced chicken breast and cook until browned.
  3. Add rice and stir to coat with oil.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes.
  6. Stir in frozen peas, salt, and pepper. Cook for another 5 minutes.
  7. Fluff rice with a fork and serve hot.
