  • 2 cups Mochiko (sweet rice flour)
  • 1 cup Sugar
  • 1 teaspoon Baking Powder
  • 1 can Coconut Milk 13.5 oz
  • 1 cup Water
  • 1 teaspoon Vanilla Extract
  • few drops Food Coloring (optional)

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine mochiko, sugar, and baking powder.
  3. Add coconut milk, water, and vanilla extract. Mix well until smooth.
  4. If using food coloring, add a few drops and mix until evenly distributed.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 60 minutes or until the top is set and a toothpick inserted comes out clean.
  7. Let it cool completely before cutting into small pieces.
