  • 1 cup White sugar
  • 1 cup Brown sugar packed
  • 2 large Eggs
  • 2 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 cups Shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter, white sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the shredded coconut.
  5. Drop dough by rounded spoonfuls onto the prepared baking sheet.
  6. Bake for 10 to 12 minutes in the preheated oven, or until edges are nicely browned.
  7. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
