Ingredients 

Pie Crust

  • 2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • ¼ cup ice water

Filling

  • 4 cups pitted cherries fresh or frozen
  • 1 cup granulated sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter. Mix until crumbly.
  3. Add ice water gradually and mix until dough forms. Divide into two discs and refrigerate for 30 minutes.
  4. Roll out one disc and place it in a pie dish. Set aside.
  5. In another bowl, mix cherries, sugar, cornstarch, lemon juice, and vanilla extract.
  6. Pour the cherry mixture into the pie crust.
  7. Roll out the second disc and place it over the filling. Crimp the edges and cut a few slits on top.
  8. Bake for 50 minutes or until the crust is golden brown.
  9. Let the pie cool before serving.
